How we brew
At Rocky Cat, good beer is never rushed. We mill our malt by hand, mash it with hot water to draw out the sugars, and then separate the liquid through our lautertun, leaving the grain behind and keeping only what matters. The wort then moves to the kettle, where we add our hops. For our hazy IPAs, this is where the magic happens: careful timing and generous additions shape everything from bitterness to aroma.
After boiling, the wort is cooled quickly before yeast is added in the fermenter. Over the following days, fermentation transforms sweet liquid into beer. We then let it mature at its own pace until the flavor is exactly where we want it. Only then do we bottle it, ready for you to enjoy.
